Undhiyu is the most famous dish of Gujarat. It is generally cooked during winters as the vegetables used in Undhiyu are available in ample. It is served in almost every gujarati wedding. This dish generally takes time to cook in a pot but I have explained an easy recipe using pressure cooker.
I learnt this recipe from my mother in law. She cooks the most yummiest Undhiyu in the world. We generally cook Undhiyu on Sundays . On Makar Sankranti, Undhiyu is cooked in every home of Gujarat.
Undhiyu can be served with poori or phulka rotis, shrikhand or jalebi
