How do you cook beet tops, that is the green leaves that grow out of the root of the beet? Yes! Beet Tops. Don't throw them away. They taste sort of like Kale. Chop them up and remove the stems and boil them for about 2 minutes and drain. Immerse in ice water just long enough to stop the cooking process. Drain well. In a large skillet heat olive oil,salt and pepper to taste and some crushed garlic and red pepper flakes (all to taste). Saute until hot. Serve with lemon wedge. Delicious and hardy!
