Cheese tomato soup


Ingredients:
1 tablespoon olive oil
5 cloves of garlic
75 g red onion, finely chop
1 big can of pureed tomatoes
1 Cup beef broth or water
1 stock cube
1 teaspoon sugar
2 tablespoons thinly sliced Basil leaves
60 g grated mozzarella
2 slices of Gouda cheese
1 tablespoon grated Parmesan
salt and pepper

2 loaves of bread for use as a bowl for soup
olive oil for greasing
Basil for decoration

Preparation:
Cut off the tip of each loaf and with a spoon remove all the pulp to form a bowl. Lubricate with olive oil and place in oven for 3 minute. Cool.
Heat the olive oil in a medium saucepan. Saute the garlic and onion for 2-3 minutes until Golden brown.
Put the tomatoes, pour in the broth and throw the dice. Add the sugar and pepper to taste, allow to simmer about 3 minutes. Season to taste with salt. Add the Basil and mozzarella, stir for about a minute and remove from heat. Pour the soup over the bread thickets. Put a slice of Gouda cheese and sprinkle with half tablespoons of Parmesan. Put under the broiler to melt the cheese. Garnish with Basil. Serve immediately.
