Products latter must:
● 6 egg whites
● 110 grams of powdered sugar
● 200 grams ground almonds
● 60 grams of powdered sugar
● 50 g flour
● 500 grams Mascarpone
● 200 ml cream 30%
● 110 grams of liquid honey
● 3 egg yolks
● 60 ml liqueur Amaretto
● 12 figs
● 125 grams of raspberries
● 1 tablespoon Amaretto liqueur
Method of preparation:Preheat the oven to 150 degrees.
Outline on baking paper 3 circles with a diameter of 18 cm.
Beat the egg whites to soft peaks, add 110 g powdered sugar and whip until glossy peaks.
Add remaining sugar, ground almonds and flour, stir gently.
Spread the mixture on the paper circlesBake them for 15 minutes and cool on a wire rack.
Water bath to beat the yolks thicken and honey - 7-8 minutes.
Remove the cream from the water bath and continue breaking until cool.
Beat the cream to soft peaks.
Mix the mascarpone and liqueur, add cream and honey cream, mix until uniform.At the bottom of the form with the rolling board and 20 cm put baking paper.
