Cucumber rolls with creamy filling of avocado.

Useful, low-calorie and vkupno;)

Ingredients:
• 1 large English cucumber (or 2)
• 3 ripe avocados
• ¼ Cup capers
• ½ Teaspoon pink Himalayan or sea salt
• freshly ground black pepper
• 2 tablespoons fresh lemon juice
• ¼ Cup fresh parsley, finely chopped + plus some for decoration
• ⅛ Cup fresh dill, finely chopped

Instructions:
For this recipe it is best to take more cucumbers than you need, since some pieces can break, in addition to rolls fit the middle part of the cucumber - the side pieces are too short.
1. Rinse and wipe the cucumbers dry. Using a mandolin or vegetable slicers to slice cucumbers long thin strips.
2. Mash the avocado pulp in a bowl and add the remaining ingredients, mix well.
3. Lay the cucumber strips and coat each stuffed avocado. Roll each strip. Make sure that at the end of each of the bands there are lots of avocado (without capers), because it acts as a glue, not allowing the rolls to turn around later.
4. Sprinkle with parsley and capers and serve.
