Peach Cobbler

This is a great dessert, typically made in the summer when fruit is in plentiful supply, but it can be made with canned fruit any time.

WHAT YOU'LL NEED:
- 100 grams (4 oz) butter
- 130 grams (5 oz) self-raising flour
- 250 grams (8 oz) sugar
- Pinch of salt
- 1 cup milk
- 3 or 4 peaches, sliced (or two cans of peaches)
- 1 tablespoon lemon juice
- Large pinch of cinnamon

HERE'S HOW YOU MAKE IT:
1. Spread all of the butter across the bottom and sides of a baking tin
2. Mix the flour, salt and half the sugar, then mix in the milk to make a smooth batter
3. Pour the batter into the baking tin
4. Put peach slices, lemon juice and the remaining sugar in a saucepan and bring to a boil (You can use less sugar at this point if you prefer)
5. Pour evenly over the batter in the tin. Don't mix.
6. Bake at 180C (360F) for 45 minutes or until golden brown
7. Serve warm or cold

In the picture it is served with peach sorbet - yeah, yum :)
