● 500 g cream cheese, room temperature
● 250 g soft goat cheese
● 75 g butter, soft
● 4 eggs
● 100 grams of powdered sugar
● 3 tablespoons honey
● 2 tsp vanilla extract
● chopped zest of 1 lemon
For Poached pears:
● 3 medium pears
● 250 ml water
● 250ml dry white wine
● 250 grams sugar
● stick vanilla
For the base:
● 240 grams flour● 200 grams butter, diced
● 80 g ground almonds
● 40 grams of powdered sugar
● 1 egg yolk
Method of preparation:
Zastelete with baking paper bottom and sides form a flexible board and a diameter of 23 cm.
In a blender, combine the flour, butter, almonds and powdered sugar.
Add egg yolk and 20 ml of cold water.Continue mixing to form a dough.
Remove it on a lightly floured surface and knead.
Spread it on the bottom of the mold.
Cool for 2 hours in the refrigerator.
Preheat oven to 175 degrees.
Bake until light golden base - 30-40 minutes.
Mix until homogeneous both types of cheese, butter and eggs.
Add the sugar, vanilla, Honey and lemon rind.
Pour over the base and bake cheesecake another 30-40 minutes.
Cool dessert for two hours at room temperature.
Wash, peel and remove the seeds pears.
Put in a fireproof container water, wine, slitting stick vanilla, sugar and pears.
Place them on baking paper, make 2-3 incisions in it.Heat the mixture to a boil, reduce heat and simmer 15-20 minutes.
Drain the pears cool them, cut them like a fan and podresete on cheesecake.
Sprinkle lightly roasted almonds, pour honey and serve.
