California salad with quinoa
Dry quinoa( quinoa, quinoa) — 1/2 Cup
Water for boiling quinoa 1 Cup
Mango large — 1 PC.
Red onion — 1/4 PCs.
Red pepper — 1/2 PCs.
Unsweetened shredded coconut — 3/4 Cup
Almonds — 3/4 Cup
Raisins — 1 Cup
Defrosted soy beans — 1 Cup
Sliced cilantro or parsley — 1/4 Cup
For the filling:
Juice from 2 limes
Balsamic vinegar — 2 tbsp
Honey — 1 tbsp
Olive oil — 1 tbsp
1. Cook the quinoa according to the instructions on the package. Allow it to cool.
2. Mango, onion and pepper cut into cubes.
3. Whisk all components of the filling together in a small bowl.
4. In a large bowl mix all salad ingredients together, including the cooled quinoa and add the dressing. Thoroughly mix the salad and serve cold.
Preparation time: 30 minutes.
